Research area and project description: Current markets require novel food ingredients from sustainable food sources. We can no longer process the way we are used to. We need to use less energy, less water, and produce less waste. It is critical to understand the principles underpinning the changes of food components during processing, to create optimal structures with soft materials, with low environmental footprint and as nutritious as possible. In other words, design structures for optimal nutrition performance. This project will focus on the use of up scalable processing technologies such as filtration, extrusion, steam injection and their use with plant-based material, to understand how we can future proof food processing.

Qualifications and specific competences: Applicants to the PhD position must have a relevant master’s or bachelor’s degree (a fast track 4-year PhD could be granted in this case with high academic standing).
- Laboratory experience with advanced techniques is considered a plus.
- Applicant should have a very good level of English for communication and writing.
- Applicant should have a research background relevant to the project description, for example, but not limited to, food science and technology, process engineering, physical chemistry of foods.
